Chilterns Nutritionist Lucy Williamson passionately believes in reconnecting our health to real food and farming.
I asked Lucy to write the foreword to the Chilterns Recipe Book because our beliefs around eating real, seasonal and local food as much as possible are so similar. Previously a vet, Lucy is a real champion of making food sustainable and supporting farmers and producers.
As a registered and award-winning nutritionist, Lucy runs her own consultancy guiding individuals and families to be their best (often with the help of our gut microbes) and providing support to British food producers and within education.
FAVOURITE WALK IN THE CHILTERNS
“We walked the whole Ridgeway a few years ago as a family + dog; blisters and all! It ended with our favourite walk – from Tring station up onto the ridge and along to Ivinghoe Beacon and fabulous views!”
FAVOURITE CHILTERNS FOOD AND DRINK
“Chiltern Oils mayonnaise! I love that its bright yellow colour comes from the golden cold pressed rapeseed oil on our doorstep.
REAL fermented tea. It just feels like a real treat and sometimes it’s really good to enjoy that alcohol free feeling. (But not always!)”
FAVOURITE PLACE TO EAT OUT IN THE CHILTERNS
“The Barn Kitchen at Peterley Manor Farm. It’s very hard to beat a working breakfast outside beside the wood burner with one of Katy’s fabulous creations (Even Ruarie the border terrier agrees because he gets a biscuit too!) A great family spot too for delicious baked and coffee.”
